Corn & Black Bean Salad
Dressing:
1/3 cup lime juice
2 cans black beans, rinsed
1/2 cup olive oil
1 garli clove - crushed
1 tsp salt
1/2 cup chopped cilantro - about 1/2 nice size bunch
Add ingredients to a jar and shake well - set aside.
3 ears corn, kernels cur off cob
1 red pepper - diced
2 tomatoes, diced and drained.
1 bunch green onions chopped - white and green portions
In a samll bowl combine all ingredients and pour dressing over. Stir well and refrigerate.
I would suggest that you double or triple this recipe. It will not last long as most of our family members see it as a meal in itself.
This is great over a salad of fresh greens with grilled chicken or steak and topped with ranch dressing that has chipotle sauce added to it. Definitely a meal unto itself.
